Menu Plan Monday



Last week for my new recipe I tried out this Chicken and Rice Casserole. It was so quick to make and yummy! Only problem I had was that I used brown rice instead of white, and I'm finding that the brown doesn't cook up well in casserole dishes. I also made Jello Jigglers (for the first time) with my daughter. What a fun meal time activity! I've got a very busy week coming up, so hopefully I will be able to manage my time wisely and get all of my meals cooked.

Monday~ Chicken nuggets, fries and veggies

Tuesday~ Pasta in a pot *new (recipe below) w/salad

Wednesday~ Marinated pork ribs on the grill, mashed potatoes, and carrots

Thursday~ Homemade macaroni and cheese, Parmesan chicken, peas w/bacon and onions

Friday~ Steak fajitas

Saturday~ Detroit Tigers game @ Yankee stadium ! My first ever major league game! It's an all day affair, so I'm assuming we'll be eating on the go.

Sunday~ Pot Roast

Desserts will be: Blueberry pie and ice cream

Pasta in a pot

2lbs. ground beef

2 medium onions

1 garlic clove

1 can (1lb.) tomatoes

1 jar Ragu (32oz.)

1 can mushrooms (3 oz.)

8 oz. shell macaroni

1/2 - 1pt. sour cream

8oz. mont. jack cheese

8oz. mozzarella

Brown beef and onion in oil, then pour off grease. Meanwhile, cook macaroni and drain. Add sauce, tomatoes, mushrooms and garlic to meat. Simmer 15 minutes. Coat 2 medium casserole dishes with oil. Layer 1/2 macaroni, 1/2 meat sauce, 1/2 sour cream, 1/2 mont. jack cheese and repeat. Save mozzarella and add at the end of cooking (unless freezing, then include it). Cover with lid or foil and bake 45 minutes at 350 degrees.

Hey just curious do you have desert only one day a week??? :):) hehe j/k Sounds like a good week. I think I am gonig to try and pop over for that pasta dinner thing!! :) Oh and have fun at the game!
