Menu Plan Monday



Last week I made a new chicken recipe in the crock pot. Whoa! Who knew that a whole chicken would crumble off the bone like that!? So tender! My husband really enjoyed this dish, while I felt the flavor was too bland. I'll have to play around with it to boost it's flavor. Anyway, on to a new week and tackling a new recipe!

Monday~ Pasta and salad

Tuesday~ Hamburgers on the grill, salad, potatoes and homemade mac and cheese (we're hosting my Aunt Joan this day)

Wednesday~ Pork chops with applesauce

Thursday~ Pizza for date night

Friday~ Chicken Casserole *new recipe below

Saturday~ Labor Day conference starts which means we should be having meals at church. However, just in case, I'll plan on some marinated steak for dinner.

Sunday~ Same as Saturday

Desserts: Oreo Cookies and Cream Pie, and ginger snap cookies.

Chicken Casserole

5-6 chicken breasts (boneless)

1 cup sauteed onions and mushrooms cut up

6 or more slices Swiss cheese or Monterrey jack

1 cup sour cream

1 can chicken or mushroom soup

1 box stuffing mix (follow directions on the box)

Layer everything (9X13 pan) in this order:

1. Put onions and mushrooms on the bottom

2. Put chicken breast on top

3. Put sliced cheese on top of chicken

4. Mix together soup and sour cream (in separate bowl) and put over cheese layer

5. Put cooked stuffing as top layer.

Bake 40-50 minutes until hot and bubbling. Enjoy!

I might just try that chicken recipe! Stuffing makes EVERYTHING tastes good!
