Meal Plan Monday


Monday~ Broccoli and cheese soup (recipe from Sarah) with turkey sandwiches

Tuesday~ Steak kabobs

Wednesday~ Chicken teriyaki stir fry

Thursday~ Homemade macaroni and cheese (recipe below), chicken Parmesan, and peas (making double and delivering a meal)

Friday~ Mexican lasagna with salad (recipe from Sarah)

Saturday~ Chicken-Biscuit Casserole (doubling and freezing 1/2)

Sunday~ New potatoes, green beans and ham. Thanks to Lisa for posting this crockpot recipe on her site last week!

Dessert: Pumpkin Bread

Homemade Macaroni and Cheese

Cook 1 1/2 cups elbow macaroni in boiling salted water till tender; drain. In saucepan melt 3 tablespoons butter; blend in 2 tablespoons all purpose flour, 1/2 teaspoon salt, and dash of pepper. Add 2 cups milk; cook and stir till thick and bubbly (it should lightly coat a spoon). Add 1/4 cup finely chopped onion (optional) and 8 ounces sharp process American cheese (I use a block of cheddar cheese), cubed (2 cups); stir till melted.

Mix cheese sauce with macaroni. Turn into 1 1/2 quart casserole. Sprinkle 1 sliced tomato with salt; arrange atop (I don't do this). I add this step next: Sprinkle top with Italian Bread Crumbs to coat. Bake at 350 degrees for 35 to 40 minutes, or till heated through. Makes 6 servings.

Actually, the recipe is from Betty Crocker. lol I think your grandma uses velveeta cheese and shells, 'cuz I have that recipe too. We'll have to have a mac&cheese show down some day, although any food grandma makes definitely blows my food out of the water. Anyway, no family secrets given out here!! :-D

ummm soo good! nothing is better than home made macaroni and cheese! Although the only kind my kids like is KD (Go figure)... I like to make my meal plans so the dinners fit in the with lunches somehow. So if I have chicken breast one night I will cook extra chicken for a lunch salad the next day.
